Blueberry Lemon Pancakes

Ingredients:

Pancakes

    •    1 serving King Arthur Baking gluten-free protein pancake mix

    •    Ingredients required per package (typically water, milk, or egg)

    •    2 tsp lemon zest

Blueberry Topping

    •    1/2 cup frozen blueberries

    •    1 tbsp maple syrup

    •    1 tbsp PB Fit powder

Optional Toppings

    •    Hemp seeds

    •    Extra lemon zest

Instructions:

1. Make the Batter

Prepare the pancake mix according to the package directions.

Stir in 2 tsp lemon zest for that fresh lemon flavor.

2. Cook the Pancakes

Heat a nonstick pan over medium heat.

Pour batter and cook pancakes until bubbles form, then flip and cook until golden.

3. Make the Blueberry Topping

Microwave frozen blueberries for about 45–60 seconds until warm and juicy.

Stir in maple syrup and PB Fit until combined and slightly thick.

4. Assemble

Stack pancakes, pour over the warm blueberry topping, and finish with optional toppings.
